    This sake is a new sake that takes more than twice as much time and effort as regular sake. The first fermentation is a long low-temperature fermentation in a wooden vat, followed by a longer second fermentation after bottling, then the bottle is turned upside down and the oriel is lowered into the bottle mouth, the oriel is frozen and removed, and after pasteurization, the sake is aged for several more months. After pasteurization, the bottle is then aged for several more months. The beer has a clear, cloudy appearance and fine bubbles. The balance of the slight sweetness is intended to create a new sake that goes beyond sake.
