    awa Sake Sparkling Junmi Daiginjo BRUT NATURE

    This sparkling junmai daiginjo is a new type of sake that requires more than twice as much time and effort as regular sake, according to the AWA Sake Association's certification standards.
    The primary fermentation is a long low-temperature fermentation in a wooden vat, the secondary fermentation is an even longer fermentation after bottling, then the bottle is turned upside down and the oli is lowered into the bottle mouth, the oli is frozen and drained from the bottle mouth, and after pasteurization, the sake is aged for a few more months.
    After pasteurization, the sake is then aged for several more months. The result is a clear, cloudy sake with fine bubbles and an elegant acidity, with a low sweetness that is unmistakably sake. Enjoy this new sake that is more than just sake. We recommend pouring it into a glass and serving it chilled.
    BRUT NATURE is a Champagne term meaning dry without any added sugar.
